Job Description:

The position of Executive Chef is an executive level position that manages all facets of the Kitchen Department. While this position is responsible for daily operations, is also requires a creative, strategic thinker who will work well with the other Department Managers to deliver a memorable Club experience that exceeds the expectations of Club members and guests. The Executive Chef is responsible for all culinary activities for the restaurant. This position will oversee all activity in the kitchen, train personnel, plan menus, oversee product purchasing and manage culinary budget.Essential Functions

  • Make periodic and regular inspections of units to observe quality of food preparations and service; food appearance; and cleanliness and sanitation of production and service areas, equipment and employee appearance.
  • Coordinate all training activities for kitchen, bakery, butcher shop and other production and service employees, including the identification and analysis of training needs and design and implementation of programs to address these deficiencies.
  • Develop recipes and portion specifications in accordance with consumer tastes, nutritional needs, product specifications, ease of preparation and establish procedures and budgetary constraints; participate in other menu planning activities to include the determination of purchasing specifications, product and recipe testing and menu development.
  • Assist operation managers as requested in areas such as plate presentation, special function menu planning and the design of new service areas.
  • Prepare operational reports and analysis setting forth progress and adverse trends and make appropriate recommendations.
  • Perform other related duties incidental to the work described herein.Qualifications
    • Candidate is required to have at least 2 years previous culinary management experience. Prior experience in a high volume, full service kitchen preferred.
    • Customer Service, prior admin experience preferred.
    • College education and/or culinary degree preferred.
    • Knowledge of Microsoft Word, Excel, Chef-tek or similar programs
    • Serve Safe certified food manager
    • Clear, positive, energetic communication skills, written and verbal.
    • Excellent organizational skills.
    • Able to work a flexible schedule to include nights, weekends and holidays.Salary will be based on experience with a base of $65,000 and potential commission structure. Additional benefits include Health insurance and PTO. This position will report directly to the General Manager.
